I think generally you will be fine but I have seen my oil go over 120C (in truth I think it was nearer 130C but I wasn't able to give it my full attention) but that was ragging it on track. Your car will be making more power so you will have to deal with the heat.
No haven't got one yet, looking at some now. Will get a mocal and some more AN10 fittings .
Will have to place it near my cooler as that's the only place filtered oil line and return line are close.
Wish I had done this before.....

Not to worry. Best getting this done now so you do not over cool your oil. On really cold days I have seen my oil not go over 92C, which means my thermostatic sandwich plate is not allowing oil to flow to the external cooler.

Yep, done! Ordered a Mocal inline thermostat with AN 10 fittings.
Not gonna wait for it , going to flush the engine next week when my oilpan baffle plate is in and the support beam is welded.
Can't wait to take it for a spin... Lots to do before I can get it MOTd... But a run down the street won't hurt..

The work looks awesome, as always 8-)

I'd watch that intake flexible hosing carefully though, being careful that it doesn't collapse under the suction of the turbo.

Yes, good point . I fitted a 3" silicon bend on the turbo now. And will secure the airfilter so it won't move. See how it holds. If not I will have to get some 3" aluminium piping .
Grinded down the altenator bracket so it doesn't rub the hose anymore.

Got a very cool update soon.. Hope to start the engine and flush it end of this week.
