Can't remember the guide I looked at but replacing the rear bearing hub is VERY easy, just as long as it comes off properly. I cleaned a lot of the rust off the metal shield behind it then gave it a lick of pain when I did mine but the hub replacement itself can be done in about half an hour, unless you have problems pulling it off.

Personally I would remove the pistons and seals, then replace the seals afterwards, preferably with new ones.
These substances might say they are safe for most rubbers but it is likely going to dry them out and the lubricant on them as well so not worth the risk leaving the seals in, especially not where brakes are concerned.
