Android could be a good shout, but will need to read usb touchscreen drivers.

No doubt someone will have Android on before we know it!

RaspBMC could work well also.

Android would be sweet, it already has everything needed for a CarPC. As said it's driver support that could hold it back

It only outputs in composite, not VGA though so it may look a bit crap on a small screen. It does output in HDMI, but it means getting an HDMI screen (not cheaps).
