still having this issue, got it running today and had a scary moment as where i dropped the clutch to change gear the revs dropped, and the engine died!! but my coolant temp gauge was going all over the place, running right up to near full, then dropping down to half if i drove very sedately. just leaving it to cool down then im going to top up the coolant. without being a bit thick, can you overfill the radiator??

no - you cant overfill the rad - but you can overfill the expansion tank - there are two lines on it and the fluid should be in the middle of the mark and will expand to top of the mark when hot.

Worst that overfilling the expansion tank will cause though is overflow down the sides of the tank - the threaded neck has chamfers on 2 sides to prevent pressure build up and allow any excess to overflow safely.
those symptoms sounds like there could be an air lock 
Or an earth/wiring fault with the loom to the 2 temperature senders on the side of the head???

You've also probably fouled up a plug by attempting to run it on three pots. That is probably fuel where you have been cranking it over to start it

sounds like a wiring fault to me if it was your coil gone it wouldn't start again after it refused to start what about the main relay?

hmmmmm..... that s an idea.... have had so many problem with relays before on my vw golf which on review appeared similar !

@mercutio , would you be able to show me what the main relay looks like on a mk4? im feeling this may more and more be the reason im having issues as ive been able to drive it with little or no problem starting first time, but after a few mins once warm, it really is quite hesitant.

It's normally a mitsuba relay tucked up under the drivers side dash near the steering column
