et 35 would be better but depends on tyre size. I would try 215/45/17 17x9 et35 or 235/40/17 et35-45.
Rolling the arches will damage the nice fresh paint you have.

What about 225/45/17 on 17x9 et25

Well my arches are cut right out flat and I can run 16x9 et 50 and 245/45s so 1/2" bigger on the radius and 10mm less tyre either side may be a pretty tight fit.
If your goin for that much arch work then a roller won't really be enough and you will be re spraying the sides to protect the cracks and bare metal.
If I was you just go for 17x8 and 225/45s and it may just require a light rolling.

I run17x8 et30 with 215/45/17 and its tight even with rolled arches and a slight pull.

Just to give you an idea of how much the arches will need to come out, these are 17x9J et15...
So yours would only be 10mm further under the arches. As said, you won't be able to get away with just rolling the arches. You'll have to cut, pull and then add new metal... Which is what I intend to do.
