over extending the cable and or the return on the throttle body removing the stop wont gain you anything

Believe it or not, ford focus ST owners complained about the torque steer on their cars, ford recalled all earlier ST's....and fitted a rubber stop under the pedal so it couldn't be pressed down as far.

 :?

The stop is under the pedal as a secondary stop.

The primary stop is on the throttle body at the WOT position.

If the system is correctly adjusted, when you push the accelerator pedal all the way down, the throttle body will hit the WOT primary stop just before the pedal hits the secondary stop.

This ensures that you can achieve full throttle.

Removing the secondary stop would be a bad plan. There would then be nothing in place to prevent you over-stressing the cable.
