I was wondering about the tea  I think the cider recipe I looked at was
- Get a LOAD of apples
- Juice/press them (I bought a juicer just for this)
- Warm (don't boil!) to kill any wild yeast (can also add some sugar)
- Pitch your yeast
- Leave
- Drink

So pretty basic, other than the £50 - £80 of apples you need to buy and juice  I think that was for 5 gallons though, so I might buy a demijohn or two and try it that way, certainly be a lot cheaper. Really want to make cider!

you dont have to kill the wild yeast, just keep adding suger every couple of weeks :D thats it, simples :D (this is for rough cider, which i prefer  ) i used to brew loads of beer, usually ipa, this was before the internet so had to get books from the libery, real pain (now we have google :D ) its also so much cheaper and its great fun and rewarding too :P just got back from a pub next to the river - 1 pint =£3.30 :o what a con  its no wonder pubs are strugling

I know, silly prices for drinks now :(

Yeah you don't need to kill the wild yeast, you can leave it, but you'll never know if it's going to give a good or bad batch!

*ps also, the americans call apple juice "apple cider", and apple cider "hard apple cider"

yeast goes through 3 stages of fermentation 1 fast - usually completes in around 2-4 days, 2 slower - now it starts on the more complex and larger sugars 10-20 days, most people bottle and drink it at this point but if you leave it for another 3 weeks the 3rd fermentation is complete, now it tastes real good. next batch put a couple of bottles back for at least an extra 4 weeks, then try it, you will be amazed how different it tastes :D

oh yeh almost forgot, all 3 are happening at thesame time. this is why you need a way of measuring the gravity
